Cooking
This variety is very tasty fresh, prepared as a pistou soup. Dry, the beans need to be soaked for 10-12 hours before cooking. They are also delicious in salads and pan-fried dishes.
Like all legumes, they are rich in carbohydrates and proteins. They are an excellent source of potassium, iron, vitamins and fiber.
