Advice from La Semence Bio ® : according to your habits, eggplants can be pruned. Clean all the shoots from the main stem (shoots from the foot, commonly called gourmands...) on 30 cm height, and then keep all the rest. Thus its foliage will be an ideal shelter for the auxiliaries of your organic cultures.
In the kitchen
Cook eggplant with its skin to limit the absorption of fat that the flesh quickly fills. It can be combined with other summer vegetables such as tomatoes, zucchini, peppers and spices to enhance its sweetness.
Low in calories, rich in antioxidants (especially in the skin), copper, vitamin B1 and B6.
